Broccoli has 5 grams of fiber and protein per CUP, making it an excellent swap for rice. It’s loaded with antioxidants and minerals and tastes great. Enjoy making the recipe below and swapping it in for your favorite rice dishes knowing it’s fueling and nourishing your body more than rice ever could.
· Broccoli, 2 heads
· Hemp Oil
Note: 2 heads of broccoli will yield about 4-cups of broccoli rice.
1. Decide how you are going to chop the broccoli. If you are using a knife and cutting board, you’ll want to chop it down to 1-inch pieces. From there, trying to keep the florets intact, chop down smaller into rice sized pieces. This way takes the longest but works very well. If you are using a food processor or blender, you will still cut the broccoli first into 1-inch pieces, and then pulse until they are the size of rice pieces.
2. Pre-heat a large skillet to medium heat and add hemp oil to the pan. Sautee the broccoli florets for about 2-4 minutes until they are slightly cooked. You want to make sure they remain their bright green color and some bite.
Tip: These florets can also be baked as a sub in a casserole to make a dish instantly more nutritious! Enjoy all the ways this can be swapped in.
